Description

A kitchen specializing in zichar cuisine is seeking a Head Chef to lead and manage operations. The role requires expertise in wok-frying, stir-fry dishes, soups, meats, sauces, and live seafood preparation, with responsibilities covering staff supervision, food cost control, hygiene compliance, and menu development. Responsibilities and Duties

* Lead and manage daily kitchen operations for zichar stall * Plan, prepare, and cook a wide variety of zichar dishes, including live seafood * Ensure proper handling, storage, and preparation of live seafood according to regulatory standards * Develop and update menus in collaboration with management * Maintain hygiene, safety, and cleanliness standards in compliance with regulations and SOPs * Manage inventory, stock ordering, and food cost control to achieve profitability * Plan and manage monthly staff roster for adequate coverage * Supervise, train, and motivate kitchen staff, delegating tasks effectively * Coach and develop a multi-national team for consistency and efficiency * Coordinate with service team to ensure smooth order flow and customer satisfaction * Monitor portion control, wastage, and food presentation standards

Qualifications and Requirements

* Minimum 5 years of relevant culinary experience, with at least 2 years in supervisory/lead chef role in Chinese or zichar cuisine * Professional culinary qualification or equivalent hands-on training preferred * Strong culinary skills with knowledge of wok-frying, stir-fry, soups, sauces, and seafood preparation * Hands-on leadership experience managing kitchen staff in fast-paced environment * Knowledge of food costing, inventory management, and kitchen operations * Ability to work long hours, weekends, and public holidays as needed * Proficiency in English and Mandarin for effective communication with staff and suppliers * Valid food hygiene or audit certificate required * Candidate must be able to work in a non-halal kitchen
