This renouned hotel is seeking for Hygiene Manager ensures that all food handling and preparation comply with strict local and international safety standards. This role protects public health, safeguards the business's reputation, and requires strong leadership with deep knowledge of FSMS, HACCP, and ISO22000. Responsibilities and Duties
*Food Safety Management* * Develop, implement, and maintain food safety management systems (HACCP, ISO22000). * Lead and ensure successful internal and external audits. * Enforce compliance with SFA regulations. * Oversee cleaning, sanitising, and personal hygiene standards. * Lead monthly food safety committee meetings. * Audit suppliers and manage quality issues with purchasing and supply chain teams. * Manage pest control and chemical vendor performance. * Monitor external caterer for staff meals and facilities. * Continuously review and improve food safety management systems. *Inspections & Audits* * Conduct regular internal audits of preparation areas, storage, and equipment. * Prepare for inspections by regulatory agencies and third-party auditors. * Plan and liaise with labs on monthly food sampling and review results. * Conduct root cause analysis and corrective actions for non-compliance. * Maintain meticulous records of procedures, training, audits, and corrective actions. * Prepare reports for management and authorities. * Investigate and resolve food safety-related incidents and complaints. * Collaborate with engineering team on inspections, repairs, and preventative maintenance. *Waste Management* * Develop and oversee waste reduction, recycling, and food waste minimisation procedures. *Training & Development* * Design and deliver food safety and hygiene training programs. * Promote a strong food safety culture and empower staff to report concerns. * Support certification for MSC (Marine Stewardship Council) & ASC (Aquaculture Stewardship Council).
Qualifications and Requirements
* Diploma/Degree in Food Science, Food Technology, Microbiology, or related field. * HACCP certification, Certified Auditor, or equivalent food safety credentials required. * Minimum 5 years’ experience in food safety, preferably in hospitality or food manufacturing. * Strong knowledge of food safety regulations, ISO22000, and industry best practices. * Proven leadership and team management skills. * Excellent communication for staff training, audits, and reporting. * Strong analytical, problem-solving, and record-keeping abilities.
