Description

We are seeking a highly skilled and experienced culinary leader to take on the role of Head Chef. In this pivotal position, you will be responsible for overseeing all aspects of our kitchen operations, from ensuring the consistent creation of exceptional dishes to leading and developing our talented kitchen team. Your expertise will be crucial in maintaining our high standards of quality, hygiene, and customer satisfaction, as well as driving innovation in our menu offerings.

Responsibilities and Duties

* Provide recommendations and guidance on the establishment's goals, objectives, and operational policies for the kitchen. * Establish clear operational guidelines and ensure all kitchen staff adhere to them. * Direct and coordinate all activities related to food preparation and production. * Ensure full compliance with all food hygiene and safety regulations. * Establish and maintain total quality management in the preparation and production of all food items, ensuring consistent high quality across all outlets. * Take full ownership of identifying and resolving any operational issues that arise. * Plan and creatively recommend diverse and appealing food menus. * Proactively anticipate changes in customer preferences, tastes, and needs, and adapt accordingly. * Develop plans and programs for the restaurant in conjunction with special events or promotions as directed by management. * Maintain a strong network by building positive relationships with other chefs within our group. * Expand professional contacts and stay informed about trends and preferences in other restaurants and hotels, advising management on relevant insights. * Stay up-to-date on new culinary techniques and products, proposing measures to enhance our food and beverage business. * Foster positive staff and customer relations, providing guidance and addressing disciplinary matters when necessary. * Maintain established standards for both food and service quality. * Effectively manage restaurant expenses, including food costs and spoilage. * Create kitchen staff duty rosters, approve leave requests, and manage all related administrative tasks for the team. * Ensure proper scheduling of kitchen staff to guarantee sufficient coverage during peak times. * Orient and coordinate on-the-job training for kitchen staff according to established procedures. * Collaborate with the Human Resources Department in the recruitment, development, and performance evaluation of staff, in line with company policies. * Oversee daily pre-service briefings, ensuring all service staff have a comprehensive understanding of the menu, prices, and other relevant information. * Motivate, educate, and continuously develop service employees to maximize their efficiency. * Attend Food and Beverage operations meetings and conduct departmental meetings to communicate information to the kitchen team.

Qualifications and Requirements

* Extensive experience as a Head Chef or Chef de Cuisine, demonstrating a strong track record of culinary leadership. * Comprehensive knowledge of food preparation and production techniques. * A thorough understanding of food hygiene and safety regulations. * Proven ability to maintain consistent high quality in food production. * Strong problem-solving skills and the ability to take initiative in resolving operational issues. * Creativity and innovation in menu planning and development. * A proactive approach to understanding and responding to customer preferences and trends. * Excellent leadership and team management skills, including the ability to motivate, train, and develop staff. * Strong financial awareness and the ability to control food costs and minimize waste. * Effective communication and interpersonal skills to build positive relationships with staff and customers. * Strong organizational and administrative skills, including experience with scheduling and staff management. * Willingness to stay updated on culinary trends and techniques. * For Italian Chef roles, a deep understanding of Italian cuisine and a passion for authentic flavors are essential.
