Description
Prepare and cook authentic South Indian dishes: dosas, idlis, vadas, uttapams, pongal, curries, biryanis, chutneys.
Responsibilities and Duties
Culinary Preparation and Cooking: - Ensure consistency in taste, portioning, and presentation for every dish. - Monitor proper fermentation of batter and freshness of ingredients. - Develop and recommend new South Indian dishes or special menu items. - Maintain quality control over cooking methods, temperatures, and portion standards. Kitchen Operations and Coordination: - Coordinate with kitchen and service teams for timely order preparation during peak hours. - Manage daily mise-en-place and preparation of ingredients and materials. - Monitor inventory levels, control wastage, and notify Head Chef or Purchasing team for replenishment. - Assist in smooth kitchen workflow and maintain clear team communication. Hygiene Safety and Quality: - Ensure all cooking and storage areas comply with Singapore Food Agency (SFA) hygiene and food safety standards. - Follow strict cleaning schedules and maintain cleanliness of kitchen equipment and utensils. - Check quality and freshness of ingredients before use. - Adhere to proper food handling, labeling, and storage procedures (FIFO). Teamwork and Training: - Support other kitchen sections to ensure smooth operations. - Assist in preparation of snacks from different Indian states.
Qualifications and Requirements
- Minimum 3–5 years experience as a South Indian Chef in authentic Indian or fine casual dining. - Strong knowledge of traditional South Indian recipes, ingredients, and regional cooking methods. - Expertise in dosa and idli batter preparation, tiffin-style cooking, and spice balancing. - Familiarity with SFA food hygiene standards and Singapore kitchen operations. - Ability to perform well under pressure in fast-paced environments. - Positive attitude, teamwork spirit, and strong attention to detail. - Willingness to work weekends, public holidays, and flexible shift hours.
