Description
We are seeking a dedicated and experienced culinary professional to take a leadership role in our kitchen, specializing in halal food preparation for a variety of events, particularly within the vibrant CBD area. This position demands a strong understanding of halal certification standards and the ability to consistently deliver high-quality cuisine for everything from large banquets to intimate corporate gatherings. The ideal candidate will be skilled in menu development, team leadership, and ensuring strict adherence to hygiene and food safety regulations, all while contributing to a positive and efficient kitchen environment.
Responsibilities and Duties
* Ensure all food preparation and handling strictly adhere to halal certification guidelines, especially for Muslim guests and events. * Assist in the conceptualization, preparation, and execution of menus for a wide array of events, ranging from large-scale banquets to smaller corporate meetings. * Supervise all food preparation and cooking activities to guarantee consistent quality, exceptional food presentation, and outstanding flavor. * Collaborate with the Head Chef on menu planning, recipe innovation, and the development of culinary offerings that appeal to a diverse clientele. * Work closely with event and banquet teams to fully understand the specific needs of each event and adjust food production schedules accordingly. * Oversee the kitchen team during events, ensuring seamless operations, timely food service, and rigorous quality control, particularly during busy periods. * Collaborate with catering teams to guarantee strict compliance with halal requirements throughout all MICE events. * Assist in leading, mentoring, and training junior chefs and kitchen staff, ensuring their comprehensive understanding of halal food preparation standards and hygiene protocols. * Maintain efficient kitchen operations, upholding high performance standards across all kitchen personnel. * Provide leadership and direction to the kitchen team in the absence of the Head Chef, effectively managing staff and delegating tasks as needed. * Ensure strict adherence to all food safety, hygiene, and halal certification regulations, including the correct handling, storage, and preparation of halal ingredients. * Monitor the cleanliness of the kitchen and ensure it meets the highest sanitation standards, with all team members following established hygiene protocols. * Conduct regular checks of kitchen equipment, inventory levels, and workspaces to maintain a safe, clean, and well-organized environment. * Assist in the management of kitchen inventory, ensuring that all halal ingredients are adequately stocked, fresh, and readily available for use. * Monitor food costs and contribute to the management of the kitchen budget, ensuring cost-effectiveness without compromising the quality of ingredients or dishes. * Collaborate with suppliers to source high-quality, halal-certified ingredients and maintain strong, positive relationships with vendors. * Demonstrate a proactive attitude, a willingness to contribute to various tasks, and the ability to assist wherever needed within the team.
Qualifications and Requirements
* Diploma or Degree in Culinary Arts, Food & Beverage Management, or a related field of study. * A minimum of 4 to 6 years of practical experience working in a halal-certified kitchen, with prior experience in banquet and large-scale event catering being a significant advantage. * Comprehensive understanding of halal food preparation standards and certification requirements. * Proven experience in a leadership role within a kitchen team, including managing food production for large-scale events. * Excellent cooking and food presentation skills, with a keen eye for detail. * Thorough knowledge of food safety and hygiene regulations. * Experience in preparing a diverse range of cuisines, with proficiency in Chinese, Malay, and Western culinary styles considered a plus. * Proactive and adaptable, with a strong willingness to contribute across different functions and support team needs as they arise.
