Description

We are seeking a highly experienced and versatile chef with proven skills in preparing authentic South Indian, North Indian, Tandoori, Indo-Chinese, and traditional desserts. If you’re passionate about traditional flavors, detailed in presentation, and efficient in high-volume kitchen operations – we want you on our team. This role demands deep culinary knowledge, attention to detail, and the ability to prepare a wide variety of dishes across multiple cuisines to perfection.

Responsibilities and Duties

Breakfast Specialties: *Idly, multiple dosa varieties, poori with aloo, pongal, chapathi, upma, aloo paratha, kichadi (all types), various egg dishes, and sambar. Chutneys & Masalas: *Mastery in preparing tomato, coconut, onion, and green chutneys. *Create masalas with channa, green peas, and black-eyed beans. Vegetarian South Indian Dishes: *Sambars: onion, kadamba, ground masala. *Gravies: karak kozhambu, puzhi kozhambu, vathal kozhambu, dahi curry. *Rasams: pepper, cumin, lemon, garlic, tomato. *Poriyals: cabbage, beetroot, carrot, beans, ladies' finger, potato. *Curries: pumpkin, spinach, snake gourd, chettinadu, aviyal, kadai vegetables. Rice Varieties: *Tomato, lemon, tamarind, coriander, sambar, curd, and ghee rice. North Indian Favorites: *Palak paneer, paneer butter masala, kadai paneer, and more. Chinese Fusion: *Fried rice, noodles, chilli chicken, chicken 65, and more. Pickles: *Garlic, mango, ginger, tomato, lemon, mixed vegetables. Non-Vegetarian Delicacies: *Fish: Tamil Nadu-style curry, Kerala curry, fry, tawa fish, etc. *Chicken: multiple curries, chettinad, tikka, lollipop, butter chicken, etc. *Mutton: masala, pepper, kadai, curry, kuruma. *Seafood: prawns fry, masala, crab curry, dry fish curry. Biryanis & Pulaos: *Veg, mushroom, Kashmiri, chicken (including Hyderabadi), mutton, fish, prawns. Snacks & Sweets: *Vadas, samosas, pakoras, bondas, bajjis, laddus, kesari, gulab jamun, pongal, various payasams and kheer, mysore pak, custards, and more. Tandoori & Grilled Items: *Tandoori chicken, chicken tikka, paneer tikka, naans, rotis, kababs (veg and non-veg). Soups & Salads: *Full range of veg and non-veg soups, including mulligatawny, spinach, corn, tomato, and all styles of fresh salads.

Qualifications and Requirements

*Mandatory: Must work on weekends and public holidays *Minimum 5 years of hands-on experience in preparing a wide variety of Indian regional and fusion dishes *Deep familiarity with traditional recipes, preparation methods, plating standards, and ingredient handling *Ability to work independently and lead kitchen helpers during peak hours *Maintain strict hygiene standards and food safety compliance *Team player with a positive attitude and strong multitasking skills *Flexibility to work in a fast-paced, multicultural kitchen
