Responsibilities and Duties

* Lead and manage the daily production of our artisanal bread, including sourdough, baguettes, rolls, and specialty loaves. * Develop and refine bread recipes, taking into account market trends and customer feedback. * Maintain consistently high standards for food quality, texture, hygiene, and presentation of all bread products. * Plan daily and weekly production schedules to effectively meet both retail and wholesale demands. * Train and supervise junior bakers and other kitchen staff involved in bread production. * Manage inventory of bread-making ingredients, oversee sourcing, and implement cost control measures. * Collaborate closely with management on the development of new bread products and seasonal offerings. * Ensure full compliance with all food safety and workplace safety standards.

Qualifications and Requirements

* Extensive experience in artisanal bread making, with a deep understanding of sourdough, baguette, roll, and specialty loaf production. * Proven ability to develop and refine bread recipes based on market trends and customer preferences. * A strong commitment to maintaining high standards of food quality, consistency, hygiene, and presentation. * Excellent planning and organizational skills to manage daily and weekly bread production schedules. * Demonstrated leadership skills with the ability to effectively train and supervise a team. * Experience in managing inventory, sourcing ingredients, and implementing cost control measures. * A collaborative spirit and the ability to work closely with management on product development. * Thorough knowledge of and adherence to food safety and workplace safety regulations.
