Description
We are looking for an innovative Chef de Cuisine to lead the culinary team at a fine dining restaurant in East Coast. The role focuses on creating fusion menus that harmonize Western and Japanese flavors, techniques, and aesthetics. You will oversee kitchen operations, mentor staff, manage food costs, and ensure the highest standards of taste, quality, and presentation. Responsibilities and Duties
* Design and execute fusion menus blending Japanese and Western cuisines * Innovate seasonal dishes while maintaining balance and authenticity * Oversee daily kitchen operations, ensuring smooth and efficient service * Maintain consistency in food preparation, portioning, and presentation * Monitor food costs, inventory, and minimize waste * Ensure compliance with HACCP and food safety standards * Lead, train, and motivate the kitchen team to achieve excellence * Conduct training on fusion techniques, plating, and best practices * Source and manage high-quality ingredients from suppliers * Collaborate with management to deliver exceptional guest experiences
Qualifications and Requirements
* Minimum 5 years of experience in high-end restaurants, with exposure to both Japanese and Western cuisines * Proven expertise in fusion cuisine and menu development * Previous experience as Sous Chef or Chef de Cuisine in fine dining or upscale fusion restaurants * Strong leadership and training skills with a collaborative mindset * Mastery of knife skills, butchery, sauces, and plating techniques * Knowledge of Japanese ingredients (e.g., dashi, miso, yuzu, sake) and Western culinary methods (e.g., sous-vide, fermentation) * Creative, detail-oriented, and passionate about innovation * Ability to perform under pressure in a fast-paced environment * Culinary degree or equivalent certification preferred * Michelin-starred or award-winning restaurant experience is an advantage
