Description

Leading the culinary direction and operational oversight of a prestigious, upscale Japanese dining establishment specializing in sushi and tempura, situated in the Orchard area. This pivotal role encompasses menu innovation, direct procurement of premium ingredients, team leadership, and strategic sales initiatives, all while maintaining the highest standards of authentic Japanese cuisine.

Responsibilities and Duties

* Take the helm of all culinary and operational facets for an exclusive, high-end sushi and tempura restaurant. * Collaboratively develop a novel sushi and tempura menu alongside the sous chef. * Engage with Japanese purveyors three times weekly to source and secure top-tier fish and produce for the restaurant. * Directly supervise restaurant personnel and the sous chef to ensure smooth daily operations. * Provide regular reports on daily sales figures and key operational updates to the company's leadership. * Generate and propose promotional strategies to the company's director aimed at boosting overall revenue. * Stay abreast of the latest Japanese sushi and tempura trends in Japan and integrate these insights into the menu offerings. * Assist company staff in maintaining customer engagement by updating relevant information through social media and other channels. * Possess fundamental knowledge of Japanese sushi and tempura, including the Japanese names of fish and vegetables, to effectively communicate with patrons.

Qualifications and Requirements

* Proven experience in a leadership role within a high-end Japanese restaurant, ideally specializing in sushi and tempura. * Demonstrated ability to create innovative and appealing sushi and tempura menus. * Established experience in sourcing high-quality ingredients, preferably with direct communication with Japanese suppliers. * Strong leadership and management skills to effectively supervise a team. * Excellent communication and reporting abilities. * A proactive approach to identifying and implementing sales-driving initiatives. * A keen understanding of current Japanese culinary trends, specifically in sushi and tempura. * Ability to collaborate with marketing efforts to enhance customer engagement. * Basic familiarity with Japanese terminology for sushi and tempura ingredients to interact confidently with customers.
