Description

We are seeking a passionate and skilled pastry professional to join our culinary team. In this role, you will support the Pastry Chef in maintaining exceptional standards for pastry preparation, food quality, and presentation across all our dining venues, ultimately enhancing the guest experience. You will also play a key role in mentoring and guiding our pastry and dessert kitchen team.

Responsibilities and Duties

* Prepare a diverse range of breads, pastries, cookies, desserts, and other baked goods according to established recipes and specific guest requests for various events. * Organize the weekly schedule, manage staff rosters and absences, and assign tasks to the pastry team. * Oversee the daily operations of the pastry section within the kitchen. * Generate innovative ideas for new and exciting pastry creations. * Collaborate with the Pastry Chef in the development of menu designs. * Assist with weekly ordering, ensuring proper stock rotation, receiving deliveries, and maintaining accurate storage of all produce. * Maintain all refrigerated areas, freezers, and dry storage spaces in a clean, safe, and organized manner, adhering to health and company regulations. * Ensure all food is prepared following standard recipes to control food costs and maintain consistent product quality. * Verify that all kitchen personnel adhere to safe working practices. * Help communicate any programs, products, training initiatives, or directives from the Executive Chef to the kitchen team. * Ensure all kitchen equipment is fully operational and safe, reporting any malfunctions to the Pastry Chef for maintenance requests. * Collaborate with the Pastry Chef in the creation, compilation, and costing of all menus. * Assume all necessary duties of the Pastry Chef in their absence. * Communicate daily with purchasing to effectively manage food costs, optimize yield, and ensure the accuracy of all orders. * Maintain high personal hygiene and grooming standards and ensure these standards are upheld by junior staff.

Qualifications and Requirements

* A culinary school certification or diploma is advantageous, but practical experience and basic education will also be considered. * Proven experience in a Pastry Junior Sous Chef role for a minimum of 2 years. * Strong understanding of various cooking methods, ingredients, equipment, and processes relevant to pastry. * Ability to handle multiple tasks and work efficiently under pressure. * Demonstrated ability to produce a high volume of work accurately, completely, and to a high standard in a timely manner. * Good communication and interpersonal skills, with the ability to interact effectively with both kitchen and restaurant staff. * Strong time management skills, fairness in staff relations, and a commitment to a respectful and non-abusive work environment.
