Sous Chef / CDP

Description

A skilled and dedicated chef is needed to join our team, specializing in authentic Texas-style barbecue. This role focuses on preparing and smoking meats, managing kitchen operations, and ensuring consistent quality in a high-volume restaurant environment. The ideal candidate will have a passion for barbecue and experience in production kitchens.

Responsibilities and Duties

* Prepare and trim meats for the smoking process, ensuring proper cuts and preparation. * Prepare ingredients for salads, side dishes, and sauces, maintaining consistency and quality. * Adhere to strict kitchen recipes to guarantee quality and consistency in all dishes. * Maintain a clean and organized work area throughout service, adhering to hygiene standards. * Provide guidance and support to junior kitchen staff, including line cooking, food preparation, and general kitchen duties. * Implement and maintain a first-in, first-out (FIFO) food rotation system, ensuring all food products are properly dated and organized for quality assurance. * Keep cooking stations fully stocked, particularly during peak operating hours. * Oversee and organize kitchen stock and ingredients, ensuring efficient inventory management.

Qualifications and Requirements

* Prior experience working in high-volume, independent restaurants is highly desirable. * Experience in production kitchen environments is essential. * Strong knowledge of meat preparation and smoking techniques. * Ability to follow recipes precisely and maintain consistent quality. * Excellent organizational and time-management skills. * Ability to work effectively in a fast-paced and demanding environment. * Strong communication and teamwork skills. * A commitment to maintaining high standards of cleanliness and hygiene. * Experience in guiding and mentoring junior kitchen staff.
