Description

We are seeking a Sous Chef to join Chef André Chiang’s new signature restaurant at Raffles Hotel Singapore. This role supports the Chef de Cuisine in ensuring world-class culinary operations, food quality, and guest satisfaction. The Sous Chef will supervise the kitchen team, maintain culinary standards, manage costs, and lead training and development initiatives. EA License Number: 22C1267 EA Personnel: R22110252

Responsibilities and Duties

* Monitor food quality, consistency, and presentation to meet the highest standards * Supervise kitchen operations, including food rotation, yield testing, and storage compliance * Work closely with receiving and storeroom to ensure quality ingredients and supplies * Control food costs, portioning, and requisitions to minimize waste * Update menu costing and contribute to menu planning and F\&B promotions * Enforce hygiene and sanitation standards in compliance with HACCP and NEA guidelines * Supervise and mentor junior kitchen staff, ensuring professional performance and discipline * Coordinate with other departments for smooth operations during functions and events * Manage scheduling, leave planning, and performance evaluations of kitchen colleagues * Lead training sessions on culinary skills, safety, and new menu items * Build guest relationships by engaging during dining experiences and gathering feedback * Support brand values, sustainability initiatives, and CSR practices

Qualifications and Requirements

* Professional culinary certification preferred * Minimum 4 years’ experience in hotels or high-end restaurants, ideally with celebrity chefs * Strong knowledge of Southeast Asian cuisine and international fine dining standards * Pre-opening experience is an advantage * Excellent leadership, communication, and organizational skills * Service-oriented, detail-focused, innovative, and adaptable to change * Multicultural awareness with ability to thrive in diverse environments
