Description

We are seeking an experienced Chinese Cuisine Chef specializing in traditional Chinese BBQ such as Peking duck, char siu, roasted pork belly, and lamb skewers. This role focuses on menu development, BBQ mastery, kitchen leadership, and innovation while maintaining authenticity and customer satisfaction. EA License Number: 22C1267 EA Personnel: R22110252

Responsibilities and Duties

* Design and develop authentic Chinese cuisine menus, with a focus on BBQ dishes * Innovate seasonal and customer-preferred items while preserving culinary authenticity * Oversee preparation, marination, roasting, and grilling of BBQ items * Manage specialized BBQ equipment (Chinese ovens, rotisseries, charcoal grills) * Standardize and implement BBQ preparation procedures for consistency * Supervise daily kitchen operations, ensuring hygiene, workflow efficiency, and timely service * Monitor inventory and source cost-effective, high-quality ingredients * Recruit, train, and lead kitchen staff in Chinese cuisine and BBQ techniques * Mentor team members to improve wok and BBQ cooking skills * Ensure high food quality, taste, and presentation for all dishes * Collaborate with FOH to align food service with customer expectations * Manage kitchen budgets, control food costs, and reduce wastage * Stay updated on culinary trends, adapting menus for dietary needs (e.g., vegan, gluten-free)

Qualifications and Requirements

* 8–10 years of professional experience in Chinese cuisine, with 3–5 years specializing in Chinese BBQ * Expertise in wok cooking, BBQ marination, roasting, and grilling * Hands-on experience with Chinese BBQ equipment (charcoal grills, Chinese ovens) * Formal culinary training preferred; certifications in Chinese culinary arts or BBQ an advantage * Knowledge of HACCP and food safety standards * Proven leadership and team management experience * Ability to create innovative and authentic Chinese BBQ menus * Strong attention to detail in food quality, presentation, and hygiene * Budget and cost management skills * Deep cultural knowledge of regional Chinese BBQ styles and adaptability to market trends * Strong communication skills with team, suppliers, and FOH staff
