Description
We are on the lookout for a dedicated and skilled Sous Chef to become an integral part of our culinary team at a leading international venue renowned for hosting large-scale events. In this role, you will support the Executive Chef in guiding the kitchen staff, with a particular emphasis on the preparation of halal-certified cuisine for a diverse range of gatherings, including meetings, incentives, conferences, and exhibitions. Your primary focus will be to oversee the daily operations of the kitchen, ensuring that all food served adheres strictly to halal standards and maintains the highest level of quality for significant events. This position requires a commitment to upholding exceptional kitchen hygiene, effectively managing a team of chefs, and ensuring all dishes align with the specific requirements of each event and the expectations of our guests.
Responsibilities and Duties
* Ensure all food prepared within the kitchen meets stringent halal certification guidelines, especially for our Muslim guests and events. * Assist in the conceptualization, preparation, and execution of menus tailored for various events, ranging from grand banquets to smaller corporate gatherings. * Supervise the activities involved in food preparation and cooking to guarantee consistency and superior standards in both food presentation and taste. * Collaborate with the Executive Chef on planning menus, developing recipes, and introducing innovative food concepts that appeal to the diverse clientele of the venue. * Work in tandem with the banquet and event teams to fully understand the specific needs of each event and adjust food production schedules accordingly. * Oversee the kitchen team during events, ensuring smooth workflow, timely food delivery, and rigorous quality control, particularly during busy periods. * Work closely with catering teams to ensure that halal requirements are strictly followed throughout all MICE events. * Assist in leading, mentoring, and training junior chefs and other kitchen personnel, ensuring their understanding of halal food preparation standards and hygiene protocols. * Ensure the kitchen operates efficiently and that all team members perform their duties to the highest standards. * Provide leadership and direction to the kitchen staff in the absence of the Executive Chef, managing tasks and delegating responsibilities as needed. * Ensure the kitchen adheres to all regulations concerning food safety, hygiene, and halal certification, including the proper handling, storage, and separate preparation of halal ingredients. * Monitor the cleanliness of the kitchen, ensuring it meets the highest sanitation standards and that all team members adhere to hygiene protocols. * Conduct regular checks of kitchen equipment, inventory, and workspaces to maintain a safe and sanitary working environment. * Assist in managing kitchen inventory, ensuring that all halal ingredients are adequately stocked, fresh, and ready for use. * Monitor food costs and help manage the kitchen budget to ensure cost-effectiveness without compromising on food quality. * Collaborate closely with suppliers to source high-quality halal-certified ingredients and maintain positive relationships with vendors.
Qualifications and Requirements
* Diploma or Degree in Culinary Arts, Food & Beverage Management, or a related field. * A minimum of four to six years of experience working as a chef in a halal-certified kitchen, with prior experience in banquet and large-scale event catering being a significant advantage. * Comprehensive understanding of halal food preparation standards and certification requirements. * Demonstrated experience in leading a kitchen team and managing food production for large-scale events. * Excellent skills in cooking and food presentation, with a keen eye for detail. * Knowledge of food safety and hygiene regulations. * Ability to perform effectively under pressure and manage multiple tasks concurrently. * Individuals who are passionate about ensuring customer satisfaction. * Team-oriented individuals who enjoy collaboration and take ownership of their responsibilities. * Proactive individuals who are enthusiastic about contributing and supporting various functions within the team. * A positive attitude and a friendly demeanor are highly valued.
