Description

We are seeking a dedicated and experienced culinary professional to oversee our halal-certified kitchen operations, catering to a diverse range of events from grand banquets to intimate corporate gatherings within the vibrant CBD area. This pivotal role demands a strong understanding of halal food preparation standards and the ability to consistently deliver high-quality, flavorful dishes. The ideal candidate will be a proactive leader, capable of managing a kitchen team, coordinating with event staff, and ensuring strict adherence to hygiene and food safety regulations, all while contributing to menu innovation and efficient kitchen management.

Responsibilities and Duties

* Ensure all food preparation and handling strictly adhere to halal certification guidelines, particularly for Muslim guests and events. * Assist in the conceptualization, preparation, and execution of menus for a variety of events, ranging from large-scale banquets to smaller corporate meetings. * Supervise all food preparation and cooking activities to guarantee consistent, high-quality food presentation and taste. * Collaborate with the Head Chef on menu development, recipe creation, and introducing innovative food options to appeal to a diverse clientele. * Work closely with banquet and event teams to fully understand specific event needs and adjust food production schedules accordingly. * Oversee the kitchen team during events, ensuring smooth workflow, timely food delivery, and stringent quality control, especially during busy periods. * Collaborate with catering teams to guarantee that all halal requirements are meticulously followed during meetings, incentives, conferences, and exhibitions (MICE) events. * Assist in leading, mentoring, and training junior chefs and kitchen staff, ensuring their comprehension of halal food preparation standards and hygiene protocols. * Maintain efficient kitchen operations, ensuring high standards of performance across all kitchen personnel. * Provide leadership and direction to the kitchen team in the absence of the Head Chef, managing staff and delegating tasks as needed. * Ensure full compliance with all food safety, hygiene, and halal certification regulations, including the correct handling, storage, and preparation of halal ingredients. * Monitor the cleanliness of the kitchen and ensure it meets the highest sanitation standards, with all team members adhering to strict hygiene practices. * Conduct regular inspections of equipment, inventory, and workspaces to maintain a safe and hygienic environment. * Assist in managing kitchen inventory, ensuring that halal ingredients are adequately stocked, fresh, and ready for use. * Monitor food costs and contribute to managing the kitchen budget, ensuring cost-effectiveness without compromising food quality. * Liaise with suppliers to source high-quality, halal-certified ingredients and maintain positive relationships with vendors. * Be proactive and willing to contribute to various tasks and assist where needed across different functions.

Qualifications and Requirements

* Diploma or Degree in Culinary Arts, Food & Beverage Management, or a related field. * A minimum of 4 to 6 years of practical experience working in a halal-certified kitchen, with a preference for experience in banquet and large-scale event catering. * Comprehensive understanding of halal food preparation standards and certification requirements. * Demonstrated experience in leading a kitchen team and managing food production for large-scale events. * Excellent cooking and food presentation skills, with a keen eye for detail. * Solid knowledge of food safety and hygiene regulations. * Experience in preparing a diverse range of cuisines, particularly Chinese, Malay, and Western, is advantageous. * Must be proactive, willing to contribute across various functions, and able to assist as needed.
