Description
We are seeking a dedicated and skilled individual to support the Head Chef in leading our sushi operations. This role is pivotal in ensuring the sushi section operates efficiently as a successful and profitable area while maximizing guest satisfaction. This involves effective planning, organization, direction, and oversight of both production and administrative tasks, all in line with established quality standards. Furthermore, this role requires fostering a positive and collaborative atmosphere between the kitchen and service teams, ensuring a unified and harmonious working environment.
Responsibilities and Duties
* Ensure the sushi preparation area is fully ready for service before the restaurant opens for both lunch and dinner periods. * Assign specific tasks and responsibilities to each sushi team member at the start of their shifts. * Develop the weekly work schedule for the sushi team. * Inform all sushi staff about any changes to the menu and communicate details of any special events for guests. * Lead the sushi team efficiently and effectively during service periods. * Supervise the sushi team during service, ensuring optimal performance and the consistent delivery of high-quality food preparation. * Maintain the cleanliness and organization of the sushi counter area, adhering to all health and safety regulations. * Ensure that all sushi team members are thoroughly trained in the preparation and cooking techniques for all sushi-related items. * Maintain appropriate stock levels for all necessary ingredients, ensuring sufficient supply for daily lunch and dinner service, as well as throughout the weekend. * Ensure that all equipment and tools used by the sushi chefs are in good working condition. * Provide ongoing training and development opportunities for the existing sushi team. * Conduct annual performance reviews with each member of the sushi team, discussing training and development goals. * Undertake any other reasonable tasks and responsibilities as directed or as deemed necessary for the smooth operation of the sushi section.
Qualifications and Requirements
* Proven experience and expertise in sushi preparation and techniques. * Strong understanding of health and safety standards within a kitchen environment. * Demonstrated ability to lead and motivate a team effectively. * Excellent organizational and time-management skills. * Ability to communicate clearly and concisely with both kitchen and service staff. * Proactive approach to ensuring adequate stock levels and equipment maintenance. * Commitment to ongoing training and development of team members. * Ability to conduct fair and constructive performance appraisals. * Flexibility to undertake additional duties as required.
