Seeking a Chef De Cuisine skilled in Chinese cuisine to oversee kitchen operations, develop menus, maintain food quality, and lead culinary teams across our hotels and restaurants. EA License Number: 22C1267 EA Personnel: R22110252

Responsibilities and Duties

- Ensure consistency, quality, and presentation of all food served across kitchens - Monitor cleanliness and standards of food displays - Innovate creative and attractive food presentations - Facilitate effective communication among kitchen staff and hosts - Ensure compliance with local food service legislation and company standards - Oversee recipe and menu development, including seasonal and special events - Conduct regular kitchen tours and equipment inspections - Maintain staff grooming and operational standards - Manage food cost analysis, inventory, and portion control (FIFO system) - Conduct monthly meetings for updates on functions, maintenance, cost control, and guest feedback - Delegate duties, train and appraise kitchen staff, and prepare succession plans - Promote sustainability practices and minimize food wastage - Perform additional duties assigned by management, including deployment across various hotel properties.

Qualifications and Requirements

- High School Diploma/GED + 5 years’ culinary/F&B experience OR - Degree in Culinary Arts, Hotel & Restaurant Management, or related field + 10 years’ culinary/F&B experience - Strong leadership and people management skills - Deep knowledge of Chinese cuisine and food preparation techniques - Experience with menu and recipe development - Understanding of food cost control, inventory, and quality standards
