Description

We are seeking a dedicated and skilled Sous Chef to join our dynamic culinary team. In this role, you will work closely with the Executive Chef, playing a key part in leading our kitchen operations, with a significant focus on preparing halal-certified cuisine for a wide range of events, from major conferences to intimate meetings. You will be instrumental in ensuring the highest standards of food quality, hygiene, and adherence to halal requirements for our diverse clientele.

Responsibilities and Duties

* Ensure all food prepared in the kitchen meets stringent halal certification standards, particularly for our Muslim guests and events. * Assist in the creative development, preparation, and execution of diverse menus for various events, ranging from large banquets to smaller corporate gatherings. * Supervise all food preparation and cooking activities to guarantee consistent, high-quality food presentation and exceptional flavor profiles. * Collaborate closely with the Executive Chef on menu planning, recipe innovation, and culinary concepts that cater to the diverse tastes of our event attendees. * Work in tandem with banquet and event teams to fully understand specific event needs and adjust food production schedules accordingly. * Oversee the kitchen team during events, ensuring seamless operations, timely food delivery, and rigorous quality control, especially during busy periods. * Work directly with catering teams to guarantee strict adherence to all halal requirements throughout Meetings, Incentives, Conferences, and Exhibitions (MICE) events. * Assist in the management, mentorship, and training of junior chefs and kitchen staff, ensuring their thorough understanding of halal food preparation standards and hygiene protocols. * Maintain efficient kitchen operations and ensure all staff members perform their duties to the highest standards of culinary excellence. * Provide strong leadership and direction to the kitchen team in the absence of the Executive Chef, effectively managing staff and delegating tasks as needed. * Ensure the kitchen strictly adheres to all food safety, hygiene, and halal certification regulations, including the proper handling, storage, and separate preparation of halal ingredients. * Monitor overall kitchen cleanliness, ensuring it meets the highest sanitation standards and that all team members consistently follow hygiene protocols. * Conduct regular inspections of kitchen equipment, inventory, and workspaces to maintain a safe, clean, and organized working environment. * Assist in the management of kitchen inventory, ensuring all halal ingredients are adequately stocked, fresh, and readily available for use. * Monitor food costs and contribute to managing the kitchen budget to achieve cost-effectiveness without compromising food quality. * Collaborate closely with suppliers to source premium halal-certified ingredients and nurture strong relationships with vendors.

Qualifications and Requirements

* Possesses a Diploma or Degree in Culinary Arts, Food & Beverage Management, or a related field. * Has at least 4-6 years of progressive culinary experience working in a halal-certified kitchen, with a preference for experience in banquet and large-scale event catering. * Demonstrates a comprehensive understanding of halal food preparation standards and certification requirements. * Has a proven track record of successfully leading a kitchen team and managing food production for large-scale events. * Exhibits excellent cooking and food presentation skills with a keen eye for detail. * Possesses a strong working knowledge of food safety and hygiene regulations. * Thrives in a fast-paced environment and can effectively manage multiple tasks simultaneously. * Finds genuine satisfaction in ensuring customer happiness through exceptional culinary experiences. * Is a collaborative team player who enjoys working with others and takes ownership of their responsibilities. * Is proactive, eager to contribute beyond their core duties, and demonstrates a willingness to support colleagues across various functions. * Possesses a positive attitude and a good sense of humor.
