Description
A prestigious luxury hotel is seeking an experienced Restaurant Manager to support the Restaurant General Manager in leading its new signature restaurant helmed by an award-winning chef. The Restaurant Manager will supervise daily operations, uphold service excellence, and act as an ambassador of the outlet. This role involves operational leadership, guest engagement, financial management, team development, and collaboration with culinary and hotel management teams to create a world-class dining destination. Responsibilities and Duties
* Support the Restaurant General Manager in supervising daily operations and service standards * Step up as the “face” and ambassador of the restaurant in the GM’s absence * Oversee guest services, ensuring consistent excellence and satisfaction * Forecast sales, covers, and payroll costs; achieve financial and quality targets * Recruit, induct, train, schedule, and manage restaurant staff * Develop and implement SOPs, service sequences, and training manuals * Oversee pre-opening preparations, training schedules, and simulations * Manage inventory, OS&E, menu pricing, and supplier relationships * Ensure compliance with health, safety, hygiene, and NEA standards * Engage with guests to build loyalty, handle feedback, and ensure personalized experiences * Lead and mentor staff through coaching, performance reviews, and training * Collaborate with marketing and communications to promote the restaurant * Manage revenue forecasts, expense control, and sales analysis reports * Represent the restaurant confidently in media and public settings * Uphold Raffles Hotel and Accor brand values in daily operations
Qualifications and Requirements
* Bachelor’s Degree in Food & Beverage or Hospitality Management, or equivalent hands-on experience * Minimum 5 years in hotel or fine-dining restaurant operations, with at least 2 years in a managerial role * Prior experience in Asia/Singapore or Southeast Asia preferred * Strong knowledge of culinary trends, sustainability, and high-volume operations * Pre-opening and fine dining experience highly advantageous * Strong financial acumen, revenue management, and operational planning skills * Excellent communication and interpersonal skills; fluency in English (additional languages preferred) * Extroverted, service-oriented leader with high emotional intelligence * Strong media presence and comfort with public representation
