Description
We are seeking a skilled Sous Chef with strong experience in Japanese cuisine to join a fine dining restaurant in Novena. The role involves preparing high-quality sushi, managing mise en place, ensuring kitchen hygiene, and supporting smooth operations under the guidance of senior chefs. Responsibilities and Duties
* Prepare mise en place and assist with sushi counter operations, including filleting fresh fish * Support in preparing sauces, stocks, and vegetables for Japanese cuisine * Ensure proper storage and temperature control of ingredients to maintain food safety * Inspect and maintain kitchen equipment in good working condition * Assist with collecting supplies from the storeroom and maintaining cleanliness of food trolleys * Perform finishing work on dishes during service as instructed by supervisors * Maintain workstation cleanliness and sanitize tools regularly according to NEA standards * Support refrigerator cleaning, station setup, and overall kitchen hygiene
Qualifications and Requirements
* Minimum 3 years of experience in a fine dining omakase restaurant * Strong knowledge of Japanese cuisine preparation and presentation * Customer-facing skills and ability to maintain good relationships with guests * Team player with good communication skills; proficiency in Japanese is a plus * Candidates available for immediate start will be given priority
