Description

A skilled and innovative culinary professional is needed to lead kitchen operations, focusing on menu development, cost management, and maintaining high standards of quality and hygiene. This role involves creating exceptional dining experiences while ensuring profitability and compliance with all regulations. The ideal candidate will be a strong leader with a passion for food and a commitment to team development.

Responsibilities and Duties

* Develop and refine menus to meet client needs and capitalize on new business opportunities. * Establish nutritional guidelines and accurately calculate recipe costs. * Plan and manage labor costs to achieve profitability and justify productivity outputs. * Maintain kitchen and surrounding areas in accordance with company standards and health code regulations. * Monitor inventory, order supplies, and procure food from approved vendors. * Conduct regular audits of par stock in all areas to ensure timely ordering and stocking of necessary supplies. * Assist and guide kitchen staff in meal preparation, creation, plating, and delivery. * Prepare meals and complete necessary prep work as required. * Maintain a positive and professional relationship with coworkers and customers. * Plan and direct food preparation and culinary activities, ensuring consistent quality standards. * Address and resolve any problems or complaints that arise. * Prioritize safety and hygiene as core competencies within the department. * Establish and enforce operating controls, SOPs, policies, procedures, and service standards. * Ensure departmental objectives align with company goals for positioning and success. * Respond to audit findings and implement continuous improvement measures.

Qualifications and Requirements

* Formal culinary qualifications as a western chef with a minimum of five years of relevant work experience. * Strong management and leadership skills, with the ability to guide a team towards achieving goals. * Ability to provide effective coaching, advice, and assistance. * Excellent time management skills and the ability to handle multiple tasks simultaneously. * Flexibility to work rotating shifts, weekends, and public holidays. * Experience working with a multicultural team. * Proficiency in PC applications.
