Description

We are seeking a highly skilled and passionate Head Chef with a specialization in Cantonese seafood cuisine to lead our prestigious fine dining restaurant's culinary team. This senior role is ideal for a seasoned chef with extensive experience in traditional Cantonese cooking, particularly with seafood, and a flair for modern presentation and menu development. You will be instrumental in delivering exceptional dining experiences.

Responsibilities and Duties

* Lead the kitchen team in the preparation of exquisite Cantonese seafood dishes, ensuring the highest levels of quality and consistency. * Develop and curate authentic Cantonese seafood menus, incorporating seasonal and premium ingredients. * Oversee all aspects of daily kitchen operations, including preparation, cooking, and plating, maintaining our exacting standards. * Train, mentor, and manage chefs and kitchen staff, fostering a culture of professionalism and culinary excellence. * Ensure strict adherence to all hygiene, food safety, and sanitation regulations. * Collaborate closely with the procurement team to source the finest live seafood and specialty ingredients. * Manage food costs, inventory, and minimize waste while upholding our commitment to premium quality. * Partner with the food and beverage and service teams to provide a seamless and unforgettable dining experience for our guests. * Innovate by creating new dishes and offering modern interpretations of classic Cantonese seafood recipes.

Qualifications and Requirements

* A minimum of 8–10 years of experience in Chinese fine dining, with at least 3 years in a Head Chef or Sous Chef role specializing in Cantonese seafood cuisine. * Expertise in the preparation of live seafood, including lobster, crab, abalone, fish, sea cucumber, and shellfish. * Deep knowledge of traditional Cantonese cooking techniques, including wok skills, steaming, braising, and double-boiling. * Proven ability to lead, train, and manage a kitchen team effectively. * Exceptional skills in plating and modern food presentation. * Culinary diploma or equivalent qualification is preferred. * Fluency in Cantonese or Mandarin; proficiency in English is a plus. * Ability to perform effectively under pressure in a fast-paced, high-end environment.
