Description
We are seeking a skilled Production / Central Kitchen Sous Chef specializing in Chinese cuisine. The role focuses on overseeing central kitchen operations, maintaining efficiency, and ensuring consistent high-quality food preparation for large-scale catering and food production. Responsibilities and Duties
* Oversee central kitchen operations to ensure smooth and efficient workflow * Prepare high-quality meals through ingredient selection, recipe creation, and menu planning * Utilize technology to enhance efficiency and reduce labor costs * Control food costs by minimizing waste and improving yield * Maintain hygiene and food safety standards in compliance with SFA and HPB requirements * Contribute to menu development, costing, and culinary innovation * Supervise and support kitchen staff to meet production targets
Qualifications and Requirements
* Minimum 3 years of experience in central kitchen, catering, or large-scale food production * Strong culinary background in Chinese cuisine * Familiarity with SFA (catering) and HPB regulations preferred * Experience in menu development and cost control * Ability to work efficiently under a shift-based schedule, including weekends
