Description
We are seeking a dedicated and experienced Sous Chef to assist the Executive Chef in leading our kitchen team, with a specific focus on preparing food according to halal certification standards for large-scale events. This role involves overseeing daily kitchen operations, ensuring all food served meets stringent halal requirements and the highest quality for a variety of events. The Sous Chef will be responsible for maintaining exceptional kitchen hygiene, managing a team of culinary professionals, and ensuring all dishes align with event specifications and exceed guest expectations.
Responsibilities and Duties
* Ensure all food prepared in the kitchen adheres strictly to halal certification standards, particularly for events catering to Muslim guests. * Assist in developing, preparing, and executing menus for a wide range of events, from large banquets to smaller meetings. * Supervise all food preparation and cooking processes to guarantee consistency, excellent presentation, and exceptional flavor. * Collaborate with the Executive Chef on menu planning, recipe innovation, and culinary development tailored to a diverse clientele. * Work closely with banquet and event teams to understand specific event needs and adjust food production schedules accordingly. * Oversee the kitchen team during events, ensuring smooth operations, timely food delivery, and consistent quality control, especially during peak service times. * Collaborate closely with catering teams to ensure strict adherence to halal requirements throughout all MICE events. * Assist in leading, mentoring, and training junior chefs and kitchen staff, ensuring their understanding of halal food preparation guidelines and hygiene protocols. * Ensure the kitchen operates efficiently and that all team members perform their duties to the highest standards. * Provide leadership and direction to the kitchen team in the absence of the Executive Chef, managing staff and delegating tasks effectively. * Ensure the kitchen strictly adheres to all food safety, hygiene, and halal certification regulations, including the separate handling, storage, and preparation of halal ingredients. * Monitor kitchen cleanliness, ensuring it meets the highest sanitation standards and that all team members follow proper hygiene practices. * Conduct regular inspections of equipment, inventory, and workspaces to maintain a safe and clean working environment. * Assist in managing kitchen inventory, ensuring all halal ingredients are adequately stocked, fresh, and readily available. * Monitor food costs and assist in managing the kitchen budget to ensure cost-effectiveness without compromising on quality. * Collaborate closely with suppliers to source high-quality halal-certified ingredients and maintain positive vendor relationships.
Qualifications and Requirements
* Diploma or Degree in Culinary Arts, Food & Beverage Management, or a related field. * A minimum of 4-6 years of experience as a chef in a halal-certified kitchen, with prior experience in banquet and large-scale event catering being highly advantageous. * Comprehensive understanding of halal food preparation standards and certification requirements. * Proven experience in leading a kitchen team and managing food production for large-scale events. * Excellent culinary and food presentation skills, with a keen eye for detail. * Thorough knowledge of food safety and hygiene regulations. * Ability to perform effectively under pressure and manage multiple tasks simultaneously. * A genuine enjoyment in ensuring customer satisfaction. * A collaborative team player who is willing to take ownership of their responsibilities. * A proactive individual who is eager to contribute and support various functions within the team. * A positive attitude and a good sense of humor are highly valued.
