Description
FK Dunamis Group, which manages Hachi Restaurant, The Public Izakaya, and The Public Izakaya 2, is seeking an experienced Senior Sous Chef to join its team. This role involves leading culinary operations in both fine dining and casual izakaya concepts. You will work closely with the owner to develop seasonal dishes, manage procurement, and guide junior chefs. The position offers excellent career progression and overseas travel opportunities. Responsibilities and Duties
* Prepare, cook, and serve Japanese dishes to customers daily * Collaborate with owner and chefs to design seasonal menus * Manage supplier relationships and maintain inventory levels * Monitor and control food costs within guidelines * Train, supervise, and support junior chefs in daily operations
Qualifications and Requirements
* Minimum 8 years of culinary experience, preferably in Japanese cuisine * Broad spectrum of culinary techniques and menu development skills * Strong leadership and cost management abilities * Knowledge of dining trends and ability to innovate new dishes * Independent, motivated, and able to work under pressure
