We are looking for a passionate Sous Chef with expertise in Japanese cuisine to join an intimate yakitori restaurant in Tanjong Pagar. The role involves assisting the Head Chef in daily operations, leading the team, and ensuring high standards of food quality, creativity, and consistency. Responsibilities and Duties

* Assist Head Chef in managing daily kitchen operations and smooth service * Supervise and train junior chefs, cooks, and assistants * Execute authentic yakitori and contemporary Japanese dishes to restaurant standards * Collaborate on seasonal menu development and sake/wine pairings * Monitor quality control of ingredients, presentation, and portioning * Manage inventory, stock levels, and supplier orders * Ensure hygiene, food safety, and sanitation compliance * Lead kitchen team in Head Chef’s absence and make operational decisions * Support cost control through waste reduction and efficient prep methods * Foster a positive and disciplined kitchen culture

Qualifications and Requirements

* Proven experience as Sous Chef or Senior CDP in a Japanese restaurant * Strong knowledge of Japanese culinary techniques (yakitori, sushi prep, knife skills, dashi, seasonal cooking) * Leadership and communication skills with ability to train and motivate staff * Ability to perform under pressure in a fast-paced environment * Understanding of food cost, waste management, and productivity * Culinary training with Japanese culinary background preferred
