Description

A growing food and beverage group is seeking an experienced Peranakan Chef to craft authentic and innovative Straits Chinese dishes. The role involves balancing heritage traditions with modern dining concepts, managing kitchen operations, and mentoring culinary staff. EA License Number: 22C1267 EA Personnel: R22110252

Responsibilities and Duties

* Plan and execute menus featuring traditional and contemporary Peranakan cuisine (e.g., laksa, ayam buah keluak, kuehs) * Maintain authenticity of recipes while introducing modern presentations * Supervise kitchen staff and ensure high standards of food preparation, hygiene, and safety * Manage ingredient sourcing, inventory, and cost control * Develop seasonal or festival menus (e.g., Tok Panjang, Peranakan-themed events) * Collaborate with management on new product development and special events

Qualifications and Requirements

* At least 10 years of culinary experience, with proven specialization in Peranakan / Straits Chinese cuisine * Strong knowledge of traditional recipes, techniques, and ingredients * Creativity in blending heritage flavors with modern dining trends * Leadership skills to train and mentor junior chefs and kitchen staff * Good communication and organizational abilities * Culinary qualifications preferred
