Description
We are seeking a Sous Chef specializing in both Chinese and Western cuisine to support banquet and MICE events. The role requires strong experience in menu planning, event execution, and halal food compliance, alongside proven leadership in managing kitchen operations. Responsibilities and Duties
* Ensure all food meets halal certification standards for guests and events * Assist in the creation, preparation, and execution of menus for events (banquets, corporate meetings, MICE) * Supervise food preparation and cooking activities to maintain consistency and quality * Collaborate with the Executive Chef on menu planning, recipe development, and food innovations * Work with banquet/event teams to adjust food production schedules and ensure smooth event execution * Oversee kitchen team performance during events, ensuring timely delivery and high standards * Mentor and train junior chefs and staff in halal food preparation and hygiene protocols * Ensure compliance with food safety, hygiene, and certification regulations * Conduct regular checks on kitchen cleanliness, equipment, inventory, and safety * Manage kitchen inventory and food costs while sourcing high-quality halal-certified ingredients * Provide leadership in the Executive Chef’s absence, delegating tasks and managing the team
Qualifications and Requirements
* Diploma or Degree in Culinary Arts, F&B Management, or equivalent * 4–6 years of professional kitchen experience (banquet/large-scale event catering preferred) * Strong understanding of halal food standards and certification requirements * Proven leadership in managing kitchen staff and large-scale food production * Skilled in Chinese and Western cuisines * Strong food presentation, cooking, and hygiene management skills * Knowledge of cost control, supplier management, and menu development
