We are seeking a highly experienced and accomplished culinary professional with a deep passion for Japanese cuisine to lead our kitchen operations. The ideal candidate will bring over a decade of experience managing multiple Japanese dining establishments and possess an unwavering commitment to quality and authenticity. This role demands a strong understanding of Japanese culinary techniques, ingredients, and hygiene standards, coupled with excellent communication skills and the ability to effectively manage a kitchen team. The Senior Japanese Chef will be instrumental in maintaining our high standards, managing resources, and fostering positive relationships with both guests and suppliers.

Responsibilities and Duties

* Ensure that all ingredients utilized in dish preparation meet exceptional quality standards. * Implement, enforce, and regularly review all health and safety regulations and guidelines. * Oversee and manage daily sales operations. * Communicate effectively and professionally with guests. * Possess a comprehensive understanding of Japanese ingredients, including seasonal fish, meats, and vegetables. * Demonstrate a strong command of authentic Japanese cooking methods. * Maintain impeccable hygiene standards across all food preparation areas, including the sushi counter and main kitchen. * Monitor food inventory levels and place orders as necessary. * Cultivate and maintain positive relationships with suppliers of Japanese products. * Exhibit a thorough understanding of various sushi preparations and techniques. * Demonstrate the ability to work efficiently and accurately, even in a fast-paced environment. * Foster a strong sense of teamwork and collaboration within the kitchen. * Oversee and direct the activities of all other kitchen personnel. * Display a high level of commitment and loyalty to the organization. * Possess the ability to communicate effectively, both verbally and in writing, in Japanese with Japanese-speaking customers and suppliers.

Qualifications and Requirements

* Over ten years of demonstrable experience in managing two or more Japanese restaurants. * A strong commitment to utilizing high-quality ingredients in all dishes. * Thorough knowledge and understanding of health and safety legislation and guidelines in a food service environment. * Proven experience in managing daily sales operations. * Excellent communication and interpersonal skills for interacting with guests. * In-depth knowledge of Japanese ingredients, including seasonality and sourcing. * Comprehensive understanding of authentic Japanese cooking styles and techniques. * A steadfast commitment to maintaining the highest hygiene standards in all kitchen areas. * Experience in monitoring food stock levels and managing procurement. * Established contacts with suppliers of Japanese culinary products. * Extensive knowledge of various types of sushi and their preparation. * Demonstrated ability to work quickly and precisely under pressure. * A positive team-oriented attitude and strong collaborative spirit. * Proven experience in overseeing and managing other kitchen staff. * High level of dedication and loyalty. * Fluency in both spoken and written Japanese to effectively communicate with Japanese-speaking customers and suppliers.
