Junior Sous Chef - Chinese Cuisine

We are seeking a Junior Sous Chef specializing in Chinese cuisine. This role supports the Chef de Cuisine in daily kitchen operations, menu planning, promotions, cost control, and staff motivation. Responsibilities and Duties

* Support the Chef de Cuisine in menu implementation, promotions, and kitchen planning * Foster positive thinking and motivation within all Food & Beverage kitchens * Ensure all action points from daily briefings and operational meetings are carried out * Maintain cooperative working relationships with other hotel departments * Comply with licensing, health, fire, and safety regulations * Enforce disciplinary and grievance procedures when necessary * Monitor customer expectations and adapt to changing needs * Manage food cost, kitchen supplies, energy usage, and utensils in assigned section * Identify operational efficiencies that benefit both clients and the hotel * Assist in strategic purchasing to control food cost while maintaining quality * Drive energy reduction through awareness initiatives within the kitchen * Conduct daily inspections of kitchens and check mise en place

Qualifications and Requirements

* Completion of GCE 'O' Levels or equivalent * Minimum of three years’ related experience and/or training, or equivalent combination of education and experience * Experience in a Chinese cuisine restaurant is an advantage * Strong knowledge of kitchen operations, food hygiene, and cost management * Ability to foster teamwork and uphold high culinary standards
