Responsibilities and Duties

- Ensure all products used for dishes meet high quality standards - Implement, monitor, and review food health and safety regulations - Maintain cleanliness of all kitchen areas after service - Prepare and manage kitchen cleaning rosters - Supervise cleaning schedules and sign off regularly - Facilitate effective communication and engagement within the workplace - Apply food safety management systems in food service - Conduct food and beverage hygiene audits - Demonstrate advanced dry heat cooking techniques - Demonstrate sous vide cooking method - Establish strong customer relationships and trust - Facilitate effective teamwork in the kitchen - Grind wet flour for dim sum preparation - Identify and utilize various meats in culinary preparation - Identify and utilize seafood in culinary preparation - Maintain workplace safety and health policies - Manage productivity improvements in kitchen operations - Solve problems and make supervisory-level decisions - Supervise food production and quality control processes - Apply knowledge of Asian food culture and culinary techniques - Incorporate nutritional knowledge and dietary requirements into menu planning

Qualifications and Requirements

- Minimum 10 years of culinary experience - Strong knowledge of Asian cuisine, especially dim sum - Expertise in food safety, hygiene, and kitchen supervision - Ability to lead, train, and motivate kitchen staff
