Description
We are on the lookout for a dedicated and skilled culinary professional to play a key role in our dynamic kitchen team. This individual will be instrumental in crafting exceptional dining experiences, particularly for our guests observing halal dietary guidelines and during a variety of events. You will contribute to menu development, oversee food preparation, and ensure the highest standards of quality and hygiene are consistently met. Responsibilities and Duties
* Ensure all food preparation aligns meticulously with halal certification standards, especially for Muslim guests and catered events. * Contribute to the creative process of developing and preparing menus for a wide range of events, from large banquets to intimate gatherings. * Supervise and actively participate in food preparation and cooking, guaranteeing consistent, high-quality presentation and delicious flavors. * Collaborate closely with the Head Chef on menu planning, recipe innovation, and culinary concepts that appeal to a diverse clientele. * Work hand-in-hand with banquet and event teams to fully understand specific event needs and adjust food production schedules accordingly. * Lead the kitchen team during events, ensuring seamless operations, timely food delivery, and rigorous quality control, particularly during busy periods. * Partner with catering teams to strictly maintain halal requirements throughout all Mice (Meetings, Incentives, Conferences, and Exhibitions) events. * Assist in guiding, mentoring, and training junior chefs and kitchen staff, ensuring a thorough understanding of halal food preparation standards and hygiene practices. * Maintain efficient kitchen workflows, upholding high standards of performance across all team members. * Provide leadership and direction to the kitchen team in the absence of the Head Chef, effectively managing staff and delegating tasks as needed. * Ensure strict adherence to all food safety, hygiene, and halal certification regulations, including the correct handling, storage, and preparation of halal ingredients. * Monitor kitchen cleanliness rigorously, ensuring it meets the highest sanitation standards, with all team members following established hygiene protocols. * Conduct regular checks of kitchen equipment, ingredient inventory, and workspaces to maintain a safe and sanitary environment. * Assist in the management of kitchen inventory, ensuring halal ingredients are well-stocked, fresh, and readily available. * Monitor food costs and contribute to managing the kitchen budget, ensuring cost-effectiveness without compromising on quality. * Work collaboratively with suppliers to source top-quality, halal-certified ingredients and nurture strong vendor relationships.
Qualifications and Requirements
* Diploma or Degree in Culinary Arts, Food & Beverage Management, or a closely related field. * A minimum of 4 to 6 years of experience working in a halal-certified kitchen, with a preference for experience in banquet and large-scale event catering. * A strong and comprehensive understanding of halal food preparation standards and certification requirements. * Demonstrated experience in leading a kitchen team and managing food production for large events. * Excellent cooking and food presentation skills, with a keen eye for detail. * Thorough knowledge of food safety and hygiene regulations. * Experience in preparing a diverse range of cuisines, with knowledge of Malay and Western cuisines being a significant advantage. * Proactive attitude, a willingness to contribute across different tasks, and the ability to step in and help where needed.
