Description
We are seeking a highly skilled and experienced cook to join our kitchen team, specializing in both South Indian and North Indian cuisine, with added knowledge in Chinese and seafood preparations. This role requires someone with a broad culinary repertoire, strong time management skills, and the ability to maintain taste, hygiene, and consistency at all times.
Responsibilities and Duties
*Prepare a wide range of breakfast dishes including various types of dosa, idli, poori, chapati, pongal, upma, kichadi, and egg varieties *Craft authentic South Indian chutneys (tomato, coconut, onion, green), masalas (channa, green peas, black-eyed beans), and vegetarian gravies (aloo gobi, mixed veg kurma, navarathna kurma) *Cook various sambar styles (onion, kadamba, ground spice sambar), rasams (pepper, cumin, garlic, tomato, lemon), and curries (karak kozhambu, dahi curry, vathal, and puzhi kozhambu) *Prepare different poriyals and vegetable dishes using seasonal produce like beetroot, carrot, spinach, okra, potato, pumpkin, and bottle gourd *Make a wide selection of rice dishes – such as tomato rice, lemon rice, tamarind rice, coriander rice, curd rice, ghee rice, and more *Cook popular North Indian items like palak paneer, butter masala, kadai paneer Handle Chinese cuisine basics such as fried rice, noodles, and Indo-Chinese fusion dishes *Create and serve pickles in various flavors (garlic, mango, ginger, tomato, lemon) *Specialize in non-vegetarian dishes, including a variety of chicken, mutton, and fish curries, dry preparations, and masalas *Confidently prepare seafood dishes, including prawns, crab, and dry fish curries *Cook different types of biryanis and pulao including veg, chicken, mutton, fish, prawn, Hyderabadi, Kashmiri, and mushroom variants *Make Indian snacks like samosa, cutlets, vadas, pakoras, bonda, bajji, and channa patthura *Prepare a range of soups including veg clear, tomato, cream of mushroom, chicken corn, mulligatawny, spinach, and egg soup *Maintain food safety, hygiene standards, and kitchen cleanliness *Monitor ingredients and prep levels, minimizing waste and ensuring timely preparation during peak hours
Qualifications and Requirements
*Must have hands-on experience in cooking all the above-mentioned dishes *Strong understanding of traditional South Indian, North Indian, and Indo-Chinese cuisines *Ability to work with speed and efficiency in a high-pressure kitchen environment *Must be available to work on weekends and public holidays *Excellent organizational and communication skills *Strong sense of hygiene and food safety practices *Willingness to follow instructions, work as part of a team, and help innovate new dishes
